Mas (mas) nm – Country house or farm in the South of France, usually made of stone.
In old French, still used in Provence, a mas is a stone farmhouse or small farming estate. Uniquely, all of the products that nourish a mas are grown onsite. This is a very sensible way to coexist with the environment as there is very little waste on a mas. Indeed, prosperity on a mas is measured by the simple pleasure of having a fulfilling meal to share with those around you. Though located in the heart of Greenwich Village, Mas (la grillade) seeks out seasonal ingredients from small, organic, and sustainable farming operations in the countryside surrounding New York City. This circle of gardens, some of the finest farmland in the world, forms our “estate.”
